Viral Cottage Cheese Flatbread -My Nourishing Twist
If you’ve been on TikTok lately, you’ll know this recipe is EVERYWHERE. I am normally a bit anti trend but this…..this I can get behind. It is silly simple, protein packed, and has gone super viral for good reason because it’s delicious. While it isn’t my own recipe that I created, I had to share it with you with a little naturopathic twist that turns it from a fun snack into a balanced, gut-friendly meal.
I’ve added vegetables for extra fibre and nutrients, plus sauerkraut for probiotics and a spoonful of natural yoghurt for a tangy yet creamy little boost of gut support. Together, this makes it not just a trend, but a nourishing plate you can feel good about.
Ingredients (serves 1)
2 large eggs (about 100 g)
225 g low-fat cottage cheese
1 cup mixed vegetables (e.g., spinach, capsicum, leek, zucchini, mushroom and broccoli)
1 tbsp sauerkraut
1 tsp natural or greek yoghurt (unsweetened)
Salt and pepper to taste (plus any extra seasonings — garlic powder works beautifully)
Method
Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
Blend eggs, cottage cheese, and seasonings until smooth.
Pour the mixture onto the tray and spread evenly — not too thin.
Bake for about 30 minutes, until the top is golden and the edges are browned. If the centre still looks soft, give it a few extra minutes. Check on it every 10 mins if you have an oven like mine.
Let cool for 5 minutes before peeling off the paper.
Serve with your cup of sautéed or steamed vegetables, a spoonful of sauerkraut, and a teaspoon of natural yoghurt on the side.

This delicious wrap is VERY high in protein, healthy fats and a touch of healthy carbs. It has fibre, probiotics, and phytonutrients from the veggies and sauerkraut. So simple, cost effective AND tasty. Yum.
